Intro: Raw Chocolate Almond Chia Pudding

Chia seeds are not just for growing on novelty clay pots...apparently they are insanely good for you.

This is pretty much the simplest chia pudding possible and several versions of it can be found quickly online. It is also an incredibly fast and easy raw food recipe which goes against the perception that in order to have a raw meal you need to plan ahead at least a week (although there are a lot of those too!). The consistency is somewhere between Jello and tapioca and makes a great breakfast, snack or dessert.

Ingredients
2 cups Almond milk
1/2 cup Chia seeds (whole or ground)
3 Tbs Raw cacao powder
2 Tbs Agave
Optional additions: Berries, banana, cinnamon, cocoa nibs, or anything else you can think of!

Ridiculously Simple Directions
Put all ingredients into a mixing bowl, whisk thoroughly and let sit for at least 20 minutes. Seriously, that's it.

Love this recipe!! Made it with regular cow's milk (I'm allergic to almonds) and honey instead of agave, and It was wonderful. Lovely texture, and healthier than regular pudding to boot. My mind is now buzzing with different variations and new applications to try. Thanks!
That was great! I had vanilla almond milk and raw powdered cacao. It was a little thin after 20 min so I added a few more chia seeds and it jelled up very nice. It was like tapioca with a little crunch. I'm going to try some different variations. Thanks for posting
Awesome! The absorption rate may vary...if you leave it longer, the seeds will be more tapioca (and no crunch). If you try other recipes, please post the results, or the link to your Instructable : )

sounds yummy, do you know if krogers sells the chai seeds...if not would Whole Foods?
