Introduction: Raw Cucumber-Carrot Noodles With Tropical Sauce

Super Healthy, light, Refreshing and a Raw recipe.... Cucumbers helps you to beat the heat as it has high water content and low in calories. The Orange and Coconut Sauce gives a refreshing tropical feel.

A spiralizer or a Mandoline slicer can be used to get the noodle shape... But as I don't have them I have tried to get the noodle string with the help of a Vegetable peeler.

Step 1: Prepare the Ingredients

Serves 2

Noodles:

Cucumber - 2

Carrot - 1

Sauce:

Orange - 1

Grated Coconut - 1/2 Cup

Salt as desired

Pepper - 1/2 Tsp

Topping:

Capsicum (chopped) - 2 Tsp

Tomato (chopped) - 2 Tbsp

Green chilli (chopped) - 1/2 Tsp

Pomegranate - 2 Tbsp

Garlic (crushed) - 3

Onion (chopped) - 1 Tbsp

Tools:

Blender

Vegetable Peeler

Mixer/Grinder

Step 2: Noodles With Vegetable Peeler

To get string of noodles from Cucumber and Carrot create slits with knife longitudinally. Make slits of the desire width of the noodle. After peeling one side rotate cucumber/Carrot a quarter turn and continue making slits and peeling and rotating until left with nothing but core. With help of peeler just peel through Be careful of your hands.

You can use Spiralizer or mandolins.

Step 3: Orange Juice

Remove the seeds and blend the orange with a Blender. Strain the puree to get the juice of the orange.

Step 4: Prepare the Sauce

To the Orange juice add grated coconut, Salt and Pepper in the mixer. Grind it in the Mixer to form a Saucy texture.

Step 5: Toss!

Add the sauce to the noodles and toss it thoroughly. Add the topping such as tomato, Capsicum, Garlic, Onion, Green Chilly and Pomegranate and its ready to serve. The pomegranate gives the sweet crunchy taste. Enjoy the tropical noodles.

You can add any veggies as you wish.
