What? You mean I can use tapioca pearls again?! Yep, that's right!

You've just made up a batch of tapioca pearls (found here but you don't want to use them all. Never fear! I'm going to tell you how to store and re-use your leftovers.

Step 1: Storage.

This instructable has been made to match my pearls recipe. I haven't made pre-packaged or store bought pearls to know if this 'ible is interchangeable. But by all means give it a go!

Ok, so you've made your pearls and drank your tea but now there's leftovers, that's fine. Keep them in your syrup and cover tightly with plastic wrap or transfer to an airtight container. They will only keep for about 36 hours I have found, but I'm surprised I kept them that long! All in the name of science, I guess.

Step 2: Prep and Cook.

When you're ready to cook your pearls pour the syrup into a saucepan with enough water to fully immerse the pearls. Be sure to leave enough syrup to cover your pearls though, this is to ensure they keep their flavour during the cool down period.
Bring your mix to the boil then spoon in the pearls, retaining the leftover syrup in your container.
You will notice the pearls will have turned white while in the fridge, basically you are going to cook them until transparent and bubbly again.
Once they're cooked spoon them into the syrup and allow to cool. Done!

Step 3: Enjoy!

Now you're ready to enjoy another delicious bubble tea with a little less effort.

I have found after around 36 hours the pearls start to break down and you will see white, floaty strands in your syrup. After 48 hours they become like rock and after 72 hours they start to smell a little funky. Generally I only leave them overnight but I stretched this as long as possible to document my results.
I would not recommend re-heating them for a second time and I haven't tried this in a microwave but I wouldn't advise that either.
One thing to note is the flavour will intensify the longer they are left in the syrup, so just be aware if you are using anything stronger than brown sugar.
