Intro: Red Velvet Cheesecake Brownie Bites

In this instructable I will show you how to make red velvet cheesecake brownie bites. These cheesecake brownies are so yummy and great for Valentine's Day, parties, or any occasion. They are super easy to make, if I can make them, you can make them, let's get baking.

STEP 1: Ingredients/Tools

Ingredients:

Red Velvet Brownie:

  • 3/4 cup of flour (96g)
  • 1 cup of granulated sugar (225g)
  • 1/4 cup of unsweetened cocoa powder (25g)
  • 1/8 tsp of salt (less then 1g)
  • 1 stick or 8 tablespoons of unsalted butter (113g)
  • 1/2 tsp. of vanilla extract (2. mL)
  • 1 Tbs. of red food coloring - about (15mL) may need more
  • 2 large eggs
  • 1/2 tsp. distilled white vinegar

Cheesecake filling:

  • 1 package of softened cream cheese, 8oz or 226g
  • 1/2 tsp. vanilla extract (2.5mL)
  • 1 large egg yolk
  • 3 Tbs. of white granulated sugar (38g)

Tools:

  • Bowls
  • muffin pan
  • spatula
  • whisk
  • fork
  • hand mixer or stand mixer
  • kitchen spray
  • plastic bag or piping bag
  • toothpicks

STEP 2: Whisk Dry Ingredients

First let's whisk together our dry ingredients, so our flour, unsweetened cocoa powder, salt, and sugar.

STEP 3: Melt That Butter

Next let's melt our butter in the microwave and add it to the dry ingredients and mix with a wooden spoon.

STEP 4: Food Coloring and Vinegar

Now let's add in our food coloring and then stir, then add in the vinegar. You may need to add more food coloring later on, but start with about a tablespoon.

STEP 5: Eggs and Mix

Next we beat our eggs and those and our vanilla extract into the mix. Using the wooden spoon let's combine all the ingredients together, adding more food coloring at this point as necessary.

STEP 6: Cheesecake Filling

Now we will make our cheesecake filling. In a large bowl add our softened room temp cream cheese, our sugar, and cream those together. Next we add our vanilla extract and our egg yolk, mix, scraping the sides as necessary.

STEP 7: Bag It

Next we will place or cheesecake filling into a plastic bag or piping bag, it helps to cover a glass with the bag, it will keep the opening of the bag wide enough for you. Once done, twist the bag. Easy as that, simple piping bag, just snip off the corner with scissors when ready to use it.

STEP 8: Fill It Up!

Now we take our brownie batter and fill up our muffin pan. I sprayed the pan first with kitchen spray. Add some batter, then pipe in some cream cheese, then add some more batter on top. Then use a toothpick and twirl it around mixing it. Or just leave it like a sandwich. Next bake at 350 F or 176 C for 10 to 12 minutes until when you poke it in the center a toothpick comes out clean.

STEP 9: Cool It

Now once done, let your brownie bites cool for 5 minutes in the pan before transferring them to a wire rack to cool completely. Enjoy! :)

I don't know how yours baked in 10-12 minutes. Mine took nearly 45 and I'm not convinced they're completely baked through now. The mixture was well gloopy, almost too runny. Also a bit too cheesy for my taste, half the quantity of cream cheese wouold be better.
What size pans were you using?. The mini ones or the full sized cupcake ones? The full sized cupcake ones will definitely take a lot longer. Also, you don't have to use all the cheesecake filling. Use as little or as much as you want.
my only regret is that I didn't find this guy sooner. Love his directions and video. Now I'm heading over to Amazon app and ordering his book. Glad I found you!!!!!!!!!!!
Just the sugar for the red velvet part, or do we include the cheesecake filling sugar too?
Nope the red velvet brownie part is made separately from the cheesecake filling part, then afterwards the cheesecake is piped onto or into the red velvet brownie batter, then you bake them. :) I hope this helps. :)
