Introduction: Red Velvet Raspberry Brownie Lava Cake

This Sinfully Red Velvet Dessert will surprise your family and friends when they cut into a slice and out oozes melting chocolate and raspberries with a delicate meringue top that melts into the filling.

Step 1: Ingredients

Brownie Ingredients & Prep

1 box gluten free brownie mix made to the directions.

fold in

1/2 grated orange rind

1 tsp vanilla

1/2 tsp red food colour paste

Pour into a greased and parchment lined 8" springform pan.

Filling & Meringue

1 pint frozen raspberries

3 egg whites, room temp

1/4 cup sugar

1 tsp vanilla

1/2 tsp red food paste

1/4 cup cocoa

3 tsp corn starch

Distribute raspberries over brownie mixture.

In a clean stand mixer bowl whip egg whites on high.

When the whites begin to get foamy slowly add the sugar.

Beat until firm peaks. Using a spatula fold in the paste, cocoa, starch and vanilla.

Spread over raspberries to the edge of the pan.

Bake in a preheated 350 F oven for 50 min.

Do not do a toothpick test as the center will not be dry.
