Introduction: Roasted Carrots With Tofu and Onion Puree

I made a Roast Carrot vegan dish, with Tofu and Onion Puree.

I want to share the recipe with you, so here goes, and hope you try it out.

Supplies

  • Soft Tofu
  • Onions
  • Carrots
  • Brown Sugar
  • Garlic salt
  • Salt and Pepper
  • Olive Oil
  • Balsamic vinegar
  • Turmeric
  • Italian Herb mix
  • Smoked Paprika
  • Cumin seeds
  • White and Black sesame seeds
  • Szechuan pepper (Sichuan pepper)

Step 1: Blending the Spices

Mix these ingredients in a spice grinder or a blender cup:

  • Turmeric 1/2 tea-spoon
  • Cumin seeds 1 tea-spoon
  • Smoked Paprika 1 tea-spoon
  • salt and pepper 1 tea-spoon each
  • Mixed Italian herbs 2 tea-spoons
  • Szechuan pepper 1 tea-spoon

Blend them until all ingredients are mixed and turned to a powder.

Step 2: Roast Carrots

Wash and prepare the carrots to be roasted with their skin on.

If you carrots have green tops like ours, you will want to trim the green, but you can leave some for decoration and to make it easier to eat.

Dry the washed carrots with paper towel, and put them in a baking tray.

You may want to cover the baking tray with a layer of baking paper, but this is optional.

Sprinkle the carrots with oil until they are covered with an even layer of oil.

Sprinkle on the spices that were blended in the previous step

Roll the carrots and sprinkle more spice to make sure that they have an even coating all round. The spices will stick to the thin layer of oil on the carrots.

Roast the carrots in the Oven at 170°C (338°F) for 30 minutes (Test with a knife to see if they are cooked, your knife should go into the carrot easily).

Step 3: Preparing the Caramelized Onion and Tofu Puree

3 Medium size onions

Slice the Onions, and cook them in a hot pan until soft.

Put Brown sugar (2 table-spoons) into the pan with cumin seeds (1 Teaspoon).

Mix salt and pepper into the pan to taste.

Stir well with the onion until the onion is fully cooked.

Add 1 Table-spoon of Balsamic vinegar to finish.

Place the onion on a side plate to cool down.

When the Onion has cooled, add the Onion and Tofu (200 grams) into a blender cup, and blend until smooth.

Set this aside for later.

Step 4: Mixing the Garnish

Add Roasted Seaweed (50 grams) and Sesame (50 grams) into a blender or spice mixer, and blend until the roasted seaweed has broken into small pieces.

Step 5: Plating

Check the carrots have cooked. When they have finished cooking, take them out of the oven and prepare to plate them.

Put as many carrots on a plate as you would enjoy, or appropriate for the number of people you are serving.

Place a tablespoon of the Tofu Onion puree on the plate next to the carrots, and sprinkle the plate with the seaweed mix.
