Intro: Roasted Garlic Stuffed Roasted Red Potatoes


Do you love roasted garlic? Do you love roasted red potatoes? Then why haven't you ever tried stuffing one into the other? Seriously, what's wrong with you? Ok, listen up!

STEP 1: Stuff You Need

You will need:

Red potato
Garlic clove
Olive oil
Salt
Pepper
Rosemary
Apple corer or knife
Aluminum foil
Baking sheet
Oven

STEP 2: The Potato

Using apple corer or knife, cut a hole in the potato wide and deep enough to hold the garlic.

STEP 3: The Garlic


Peel garlic and put it in the hole.

STEP 4: The Seasoning


Sprinkle with salt, pepper and rosemary (if you want to get real fancy, use a small sprig of fresh rosemary). Fill the rest of the hole with olive oil.

STEP 5: The Wrapping


Wrap in aluminium foil, being careful to keep it upright so as not to spill the oil.

STEP 6: The Roasting


Place on baking sheet and bake at 475f for 40 minutes.

STEP 7: The Eating


Unwrap and enjoy! Makes an interesting and delicious side.

You could try drilling the potato I haven't tried it myself yet but I think it would work if you are careful and go slow.

Just made these for dinner, using new potatoes and an exacto knife to hollow them out. While they were in the oven, I was thinking 'Wow, those were a lot of work, I don't think I'm doing that again.'

They need to eat more garlic. :)
