Introduction: SIMPLE SWISS MERINGUE BUTTERCREAM

Step 1: WHISK

4 Large Egg Whites

337g / 1 & 1/2 Cups Caster Sugar

340g / 1 & 1/2 Cups Unsalted Butter (cubed)

2tsp Vanilla Extract

Boil some water in a saucepan. Place a metal or glass bowl on top of the saucepan (make sure the water is not touching the bottom of the bowl). Add the egg whites and sugar to the bowl and whisk until the sugar has dissolved. Place the mixture in a stand mixture and whisk and a medium/high speed for 10 minutes. Slowly add the butter, piece by piece and finish with the vanilla extract.
