Introduction: Salted Nut Roll Cookies

I have a family full of boys that love sweet and salty food items. Bacon and maple syrup, eggs and honey, trail mix......salted nut roll candy bars! Okay, so they've never actually had a salted nut roll candy bar but they have had the homemade kind - and love them!

The homemade nut rolls I make have always been in bar form using a cake mix for the base layer. I wanted the bite size form of the bar that we all love but didn't want to use a cake mix. I also didn't have a cake mix so.......Viola! The salted nut roll cookie was born.

They still have all the splendor of a nut roll (bar or candy bar form) disguised as a cookie in perfect proportion. It's also a lot less mess when it comes time for clean up!

**In addition to the two following recipes you will need salted peanuts and sea salt.

Step 1: Bake Cookies

Salted Nut Roll Cookie (Base Layer)
6 T. Butter
1 c. Sugar
1 egg
1 t. Vanilla
1 c. Flour
1/2 t. Baking powder
1/2 t. Baking soda
3/4 t. Salt
1/2 c. Rolled oats

Preheat oven to 350 degrees F.

In the bowl of a stand mixer add butter and sugar and mix until light and fluffy. Add in egg and vanilla and mix well.

Add flour, baking powder, baking soda and salt and mix until combined. Fold in oats.

On a parchment lined baking sheet drop batter by one inch spoonfuls. Flatten slightly.

Bake 8-10 minutes or just until set. Remove from the oven and let cool completely on wire racks.

Step 2: Make Nougat

Salted Nut Roll Nougat
1/3 c. Light corn syrup
2 T. Butter
6 oz. peanut butter chips
5 oz. mini marshmallows

In a medium sauce pan melt syrup and butter over medium-low heat. Add peanut butter chips and melt stirring continuously. Add marshmallows and continue to stir until marshmallows are completely melted and nougat is smooth.

Let cool slightly.

Step 3: Assemble and Eat

On top of a completely cooled cookie spoon a generous amount of nougat and spread to the edges of the cookie. While the nougat is still warm press peanuts gently into the nougat. Sprinkle tops with sea salt. Repeat with remaining cookies.

Makes approximately 2 dozen cookies.

Eat and enjoy!!

***Sprinkling tops of cookies with sea salt is optional. It depends on the salt content of the peanuts and your personal preference. We like them salty!
