Introduction: Sandwich Bread
make your sandwiches something to remember.
Step 1: Round Up the Usual Characters
1/4 cup warm water
1 cup warm milk
1 1/2 tsp yeast
1 1/2 tsp sugar
1 egg, slightly beaten
Mix and let set till foamy
Add
2 1/14 cups flour
1 Tbs sugar
1 1/2 tsp salt
4 tbs butter, room temperature
Step 2: Mix Then Kneed
Kneed while adding up to one cup additional flour, about 5 minutes.
Let rise until double in bulk.
Punch down, let rise again, then one more time.
For a total of 3 times.
Step 3: Makes a Large Loaf
I couldn't find my large loaf pan so I made a small one and some biscuits.
Bake at 425 degrees for 10 minutes,
lower oven to 350 degrees for 10 minutes more until desired brown-ness.
You can give it a spritz of water at the start of baking. But sometimes I forget and it comes out fine.
Makes a grilled cheese to die for.

How long does one let it rise for? And to repeat the rising, do you kneed it & then allow it to rise then kneed it again, etc?

let rise until double in bulk. Depends on the warmth and humidity of your kitchen. If in a hurry, you can put your oven on 200 degrees. Turn it OFF then put it in there. Should take less than 30 minutes a rise. You don't need to kneed in between. Jut punch it down. I like to make mine the night before and after the second rise, I put it in the fridge over night. Hope this helps.
