Introduction: Sausage, Egg, & Biscuit Casserole With Sawmill Gravy

Feeds: 2-3 adults with possibility of leftovers.

Because it is only broiled together at the end, this recipe is easily doubled for large families. Just extend your ingredients as needed, pan, then broil until cheese is bubbly and melted.

This recipe is good if you are overdue for a fridge/pantry cleanout. Sprinkle with bacon, add some cheese or onions to your scrambled eggs, top with chives or cilantro, add some heat with Sriracha sauce. This is purely a base for a wonderfully creative breakfast!

This dish reheats well in the oven. Pop a slice in at 350 for 15 minutes for an impromptu breakfast or as an excuse to have another mimosa.

Step 1: Step 1: Gather the Goods

Casserole Ingredients

  • 6 Mary B's frozen biscuits
  • 1/2 lb. breakfast sausage
  • 4 eggs
  • 4 oz. shredded cheese (I used a casserole blend, but any type can be used)
  • 2 tbsp. fresh parsley, chopped (optional for topping)

Sawmill Gravy Ingredients

  • 2 tbsp. sausage drippings
  • 2 tbsp. flour
  • 1 cup milk
  • kosher salt and fresh ground pepper

*Mary B's biscuits can be found in the frozen section. They are the best substitute for homemade southern style biscuits I have found. They offer many styles but I like the Buttermilk and Buttery Taste style for breakfast recipes. If you cannot find Mary B's, Grand's! by Pillsbury is a good alternative for this recipe.

*I made this breakfast bake for two adults but it can easily be modified to fill more bellies!

Step 2: Step 2: Get Cookin'

Instructions

  1. Heat oven to 350 and bake frozen biscuits for 20 mins. You may butter the biscuit tops at 15 minutes, if desired.
  2. Meanwhile, brown sausage in skillet until done, drain and reserve drippings, set sausage aside.
  3. Return 2 tbsp. drippings to skillet and sprinkle in flour, cook on medium heat until golden (about 5 minutes).
  4. Add milk, stir until gravy boils and thickens (add more milk if needed but mixture should be a little thick) season to taste with salt and pepper.
  5. In separate skillet, scramble eggs, add splash of milk for fluffier texture, if desired.
  6. In 8" glass casserole dish, arrange cooked biscuits at bottom (I gently disassembled my biscuits and filled all gaps with crumbly pieces to get an even base).
  7. Spread sawmill gravy over biscuits then top with eggs and sausage, sprinkle evenly with shredded cheese.
  8. Broil casserole in slightly open oven until cheese is melted (I let my cheese get a little toasted for crunch).
  9. Remove from oven and top with chopped parsley. Enjoy!

*you may substitute sausage drippings for butter but I highly recommend the drippings!
