Introduction: Savory French Toast Breakfast Melts

I make fresh bread every day, which is great except that the absence of preservatives means that is goes stale overnight. That's not usually a problem as it gets scoffed pretty fast, but on the occasion we have leftovers I'll sometimes make some savory French toast and top it with bacon, mushrooms, onions and grilled cheese for breakfast.

Supplies

You need bread (stale is fine), eggs, milk, butter, cheese, bacon, onion & mushrooms. The bacon, onion & mushrooms can be substituted with any other topping you like - leftover potatoes, spinach, peppers, tomato, salsa, sausage, baked beans, fried egg, pretty much anything cooked-breakfasty goes.

Step 1: Egg Mix

Whisk together with a fork two eggs and 1/2 cup milk and salt & pepper to taste, and soak your bread in it. It's going to depend a lot on your bread, but a two egg mixture will do 3-4 slices of bread.

Step 2: Fry and Broil

Fry bacon, mushrooms, onions, whatever you want for topping. Once cooked, set aside.

Butter the frypan and cook your french toast to your preferred level of browning on both sides. Remove heat and arrange your toppings on the toast. Grate cheese on to each slice and melt it in your oven on the broiler setting for a few minutes.

Step 3: Eat

Serve and enjoy!
