Intro: Seared Skirt Steak With Chimichurri

Another great recipe showing the taste and versatility of the skirt steak.

This time we're cooking an Argentinian classic dish of steak and chimichurri sauce.

The steak is quickly seared to rare/medium rare (the ends of the steak cook a little faster than the middle). After resting it is sliced across the grain and served with the chimichurri sauce to leave as good a steak dish as you'll find, and one that's pretty easy on the pocket too.

Is it possible that was a flank steak rather than skirt steak? The skirts I get in my parts are always long and narrow.
