Intro: Sherry-Dill Chicken Salad

Delicious, easy chicken salad with a unique touch

STEP 1: Ingredients

You will need the following:

1 c cooking sherry
1 c water
3 chicken breasts
1/2 red onion, diced
1/4 c sour cream
1/4 c mayonnaise
1 tbsp dried dill (fresh is preferred, i just didn't have any. If using fresh, use about 4 tbsp)
sea salt & fresh ground pepper to taste

STEP 2: Poach Chicken

Put the chicken breasts, sherry and water in a pot and bring to a boil. Reduce to a simmer, and cook until chicken is cooked through (about 15 minutes). Remove chicken from liquid, and place in refrigerator to cool.

STEP 3: Boil Liquid Down to Sherry Reduction

Making sure it doesn't boil over, boil the liquid until you have about 1 Tbsp of syrupy liquid. Scrape liquid out, and refrigerate.

STEP 4: Dice Chicken, Onion, Combine

Once the chicken has cooled (about 1 1/2 hours), dice the chicken and onion into the size pieces you want. See my instructable on dicing onions here.

Throw both into a bowl to dance together.

STEP 5: Add Mayo, Spices, Reduction, Mix...

Add your 1/4 c mayo, 1/4 c sour cream, the sherry reduction, 1 Tbsp dill.

Mix well, then season with salt and pepper to taste. (I actually use 1/2 black pepper and 1/2 coriander in my grinder, use whatever you like best)

Refrigerate again for at least an hour (preferably overnight) for the flavors to mellow.

STEP 6: Enjoy!

Make yourself a delicious sandwich!

Spread it on pancakes!

Blend it into a smoothie!

Ok, well I just made a sandwich with lettuce, tomato and munster cheese on some homemade bread...

I think next time I might add some chopped apple and/or some chopped cashews...

read your recipe through verra verra tastey, I humbly suggest adding some course chopped brandied prepared chesnuts to the mixture when done. A varient of this is to keep the sherry add some ginger then add curry powder to the stuff, if you do, small diced peaches or raisons are a real nice "mixin' along with coconut. this is a great basic recipe that stands on its own though.
never ever ever ever use cooking sherry it has, BY LAW 15% salt added to it, taste like crap. just buy sherry cream sherry or dry either will work. you may then need to season for salt, but YOU controll it, not us laws in regards to alcoholic beverages

do you cook the chicken before making chicken noodle soup?
no, you would want all the juices to flavor the stock.
i was showing him an example of when you would boil chicken, in this case it's in chicken noodle soup.
