Shrimp & Mango Ceviche

Introduction: Shrimp & Mango Ceviche

A simple and delicious way to celebrate spring!

What You Need:
2 mangoes
1 kilo of fresh shrimp
1 onion
2 cucumbers
2/3 cup fresh lemon juice
1/3 cup orange juice
2 habanero peppers
1 handful cilantro
salt and pepper

Step 1: 1

1- Wash, peel and gut the shrimp before cutting into small cubes.

Step 2: 2

2- In a large bowl, mix the lemon juice, orange juice, salt and pepper to taste. Add the cubes of raw shrimp, cover and refrigerate for 2 hours or until shirmp are cooked in the citrus (when they turn pink).

Step 3: 3

3- Chop the mangoes, cucumbers and onion into small cubes. Cut the cilantro and the habanero peppers into small pieces and add to taste.

Step 4: 5

5- Add the mango, cucumber, onion, cilantro and peppers to the bowl of marinated shrimp and mix well. Serve on corn chips with slices of avocado on top. Best eaten cold on a hot day.
