Introduction: Guacamole Recipe

This is the way we make guacamole in my house. It's a super simple recipe.

Nearly every time Tyler and I go shopping, we get the supplies for guacamole and make it together. I woke up feeling homesick this morning, and decided I'd show everyone how to make guacamole the Ratfink way. It's the best way, in case you were wondering. :) I can't say it always stays exactly the same, but this is a good base recipe for guacamole - if I let Tyler run wild he puts lots of crazy things in it, even crushed flamin' hot Cheetos and mustard. He will try anything.

Step 1: What You'll Need:

  • 2 large avocados
  • 1 small tomato (a roma or smaller)
  • 1 jalapeno
  • 1/4 of a large red onion
  • 2 cloves of garlic
  • lemon or lime juice (we've made it with lemon juice, and it tastes just as good as lime juice!)
  • salt and pepper
  • chili powder
You'll also need a knife, cutting board, a fork and a container to mix it in.

Step 2: Avocados!

Slice the avocados in half, take out the pit, and use the fork to scrape all the flesh into the bowl.

Step 3: Citrus!

Squeeze a half a lime or lemon over the avocados.

(Roll it on the counter under your palm to get the juice to flow easier.)

Step 4: Garlic!

Mince your garlic and dump it into the bowl.

(You could also grate it if you're afraid of chunks... but where's your sense of adventure?)

Step 5: Tomato!

Cut your tomato in half, and scoop out all the watery bits and seeds.

Then chop it up finely and put it in the bowl.

Step 6: Jalapeno!

Cut in half, remove seeds/membrane if you want (I'd recommend leaving at least half of the jalapeno intact) and cut it into a small dice.

Step 7: Red Onion!

Dice up 1/4 of your red onion finely and drop that in.

(Using this much red onion is delicious and also seems to keep it from browning as quick. I decided to put in extra red onion after watching this video: and I think it works.)

Step 8: Miiiiiiiiiix!

Take your fork and mash mash mash, making sure everything gets well combined.

Add in some pepper and good pinches of salt and chili powder, and mix and taste. You can also add extra lime/lemon juice at this point - I normally do. Just keep adding and tasting until you're happy.

This is a good thing to make before you start dinner (taco night yay!) - if you let it mingle on the counter for a half hour or so the flavors are even better!
