Introduction: Skillet Ravioli Lasagna

This one pot meal is the perfect dinner for a busy weeknight. It comes together easily, is extra tasty, and best of all the clean-up is super quick!

I love a good lasagna, but sometimes the effort seems like too much – this Skillet Ravioli Lasagna is a great alternative and really packs in the flavour of a traditional lasagna.

Note: This meal serves 6, so feel free to divide the recipe in half for a smaller portion or if you are concerned it won’t fit in your pan. It does require a large pan with high sides.

Step 1: Ingredients & Supplies

For this 6 serving recipe you will need:

  • 2 tbsp olive oil
  • 1 pound lean ground beef
  • ½ medium onion
  • 2 tsp minced garlic
  • 1 tsp crushed red pepper flakes (optional but adds some nice heat)
  • 28 oz. can diced tomatoes
  • 8 oz. can tomato sauce
  • 1 ½ cup vegetable broth (use low sodium)
  • 2 packages of 9 oz. ravioli, from the refrigerated section
  • 8 oz. mozzarella cheese, shredded
  • ½ cup parmesan cheese petals
  • Flat leaf parsley for garnish, chopped

  • Large frying pan with high sides
  • Grater
  • Measuring Cup
  • Wood spoon or spatula

Note: Don’t forget to cut up the onion and parsley, as well as grate the cheese before you start cooking.

Step 2: Start Cooking

Add olive oil to large skillet. Add onions, garlic and red pepper flakes. Stir over medium heat until onions are soft and translucent.

Step 3: Add Beef

Add the ground beef and cook, breaking meat up with wooden spoon while it browns.

Step 4: Sauce & Pasta

Once beef is cooked through, add diced tomatoes, tomato sauce, vegetable broth and ravioli.

Bring to a boil over high (but not max) heat, then reduce heat to medium and simmer.

Continue to simmer until ravioli are tender and sauce has reduced and thickened. This should be about 15-20 minutes.

Note: No need to drain the liquid from your diced tomatoes – just add the entire can to the pan.

Step 5: Add Cheese

Remove from heat and add mozzarella and parmesan cheese, leaving some set aside for garnish. Stir the cheese in until combined.

Step 6: Plate & Garnish

Divide the ravioli lasagna into bowls or plates and top with shredded mozzarella, parmesan petals and chopped parsley.
