Introduction: Skinny Sweet Potato Casserole
I came across a wonderful recipe here for traditional sweet potato casserole topped with both marshmallows and candied pecans and you would never know that it is actually a very healthy side dish! This recipe looks impressive, but only takes about 20 minutes to whip together. Healthy, Tasty, Easy and Fast? Yes, the perfect side dish awaits...
Here is what you will need for about 8 servings:
4 medium Sweet Potatoes, peeled and cubed
1/4 cup Butter, softened
1 1/2 teaspoons salt
1/2 teaspoon Vanilla Extract
1/2 cup Candied Pecans
2 cups Mini Marshmallows
First, Preheat your oven to 350
Place your sweet potatoes in a large pot and cover with cold water. Covering potatoes, or any root vegetable, for that matter, with cold water first and allowing the whole thing to come to temperature is the key to creaminess. Boil the potatoes until they are tender, about 15 minutes.
Drain and cool slightly, then add softened butter, salt, vanilla and brown sugar.
Mash it all together so it is very creamy, you could also use beaters to do this.
Pour the mixture into a 8x8 casserole dish. Top with Pecans. Then add the marshmallows and bake for 30 minutes, or until the marshmallows are golden. Dig in!
