Step 1: Make the Cookie Dough
1 Cup unsalted butter softened
1½ Cups sugar
2 eggs
1 Tablespoon clear vanilla extract
½Teaspoons baking soda
½Teaspoons salt
4 Cups all purpose flour
parchment paper
rolling pin
snowman cookie cutter
1.5-2" circle cookie cutter
white sprinkles or any holiday type
4 Cups powdered sugar
3 Tablespoons meringue powder
6 Tablespoons water
1 Teaspoon clear vanilla extract
1 Cup white chocolate melts
piping bags
piping tips
For the cookie dough: In a mixer beat butter until smooth. Add in sugar and then eggs. Mix in vanilla, followed by baking soda, salt and all purpose flour.
Step 2: Roll and Cut Out Shapes
Roll sugar cookie dough 1/2" thick between two pieces of parchment paper. Place in refrigerator for 20-30 minutes to make cutting shapes easier.
Step 3: Cut Out 3 Shapes Per Cookie Serving
You will need 3 snowmen cookie cut outs. One of the 3 snowmen must have a circle cut out from the center which needs a cut out leading from the circle to the bottom of the cookie (this acts as the "exit" for the pooping snowman). It is also where you will place your "snowballs" in the future assembly.
Step 4: Baking Your Snowmen
Bake snowmen on parchment paper 375 degrees for 8-10 minutes. Allow to cool. Take one solid snowman (this will be the top of the cookie) and outline with royal icing.
Step 5: Royal Icing for Decorating
To make Royal Icing: in mixer ,beat powdered sugar, meringue powder, water, and vanilla for 10 minutes until thick. Use the thick royal icing to trace borders on cookie. Thin out royal icing to "flood cookie"
Please note, you are only decorating one solid snowman cookie per serving. The other 2 will not be seen.
Step 6: Make Sure You Allow Them to Dry Completely
Allow the flooded royal icing cookies to dry completely before assembling the tops. Move on and assemble the bottom portion while drying.
Step 7: Attach the Center Cookie to the Base Cookie
Melt white chocolate candy melts according to package directions. Place in a baggie & snip off end. Trace underside of the circle cut out cookie with melts and sandwich down on non decorated cookie.
Step 8: Chose Your Sprinkles
Fill the circle with your choice of holiday sprinkles. Some I have all white for snowballs, others we chose candy cane shaped sprinkles.
Step 9: Add the Little Details for Cuteness
After all of your top cookies are decorated with details and completely dry. You're ready to assemble your Snowball Pooping Snowmen!
Step 10: Secure the Top Decorated Cookie to the Middle and Base
Take the melted candy white chocolate melts and trace the back of the decorated, dried cookie. Sandwich down on the already "glued" sprinkle filled portion
Step 11: Allow Finished Cookie to Dry Completely
Allow these cute little snowmen to dry completely before bagging up as gifts. Plus, be careful how you tilt them
Step 12: Enjoy Seeing Your Friends Smile With This Unique, Edible Gift
Seriously adorable cookies. And the best part is they are not just a "holiday" cookie. They are perfect all winter long.
