Intro: Speculaas-cookies (a.k.a. Dutch Spice Cookies)

Speculaas is a real treat in Western-Europe. We eat it on various ways :on some bread, with coffee, mixed with ice cream. It's thin, very crunchy and made with white flour, butter, brown sugar and spices like cinnamon, cloves, nutmeg, ginger, white pepper and cardamom. Some while ago a genius women made speculaaspasta ( speculoospaste ) which is creamy speculaas to spread on some bread. . This stuff is so good so I tried to combine it with a cookie.
NOTE :I'm not sure if you can buy this outside Belgium

STEP 1: Ingredients

This can be done with almost every recipe. If you like chocolate chip cookies just use a recipe of your choise. Just keep in mind that this stuff is very fat and very sweet. You might want to reduce the amount of butter and suger. I used following recipe


2/3 cup brown sugar
1/3 cup speculaaspasta
4/3 cup flour
2 tbls butter
1 egg
1 teaspoon vanilla

STEP 2: Assemble

Mix the butter, the sugar, the flour and the vanilla. Ad the speculaas paste and mix briefly

You can replace the speculaas paste by the following mix or the mix  provided by gellocks in the comments
mix all the ingredi�nt en ground them
30 g cinnamon
10 g clove powder
10 g nutmeg
5 g white pepper
5 g anise seed
5 g coriander seed

STEP 3: Bake the Cookie

Put the cookies in an oven for 10 to 13 minutes at 180°C.
When the cookies are almost done, add some paste on top of the cookie and let it bake for 5 more minutes.
Let the cookies cool down and enjoy !

 Thanks for the instructable!  These cookies were wonderful!!  I too am ADDICTED to speculoos and until recently would bring it back by the case when visiting family in the Netherlands.  The parent company, Lotus, does have a US sister company that supplies the original cookies and nooooow my much loved speculoos paste online!!  It's kinda pricey but cheaper than popping over to NL or BE.. lol  Here's the link..  www.biscoff.com/gourmet/shop...  As for the speculaas spice... Hmm... hard to say. They taste allot like speculaas but these are more tender, speculaas crunches. I guess :D

My mom used to make these cookies for Christmas from scratch (without the paste). They are yummy!
The spices are in the paste then - you need paste to make these? L
I think it should be possible to replace the paste by spices
I think so too, but not having tasted this I'm a bit clueless. "How to make speculoospaste" would be a good instructable...? L
