Introduction: Spicy Cheeseburger Dip
This is a long time favorite dip of mine that a friend served at a party many years ago. His dip was an adaption of the Rotel and Velveeta cheese dip that is on commercials lately, his adaption was adding cans of chili. Quick, easy and tasty, what more can you ask for in a party dip ! The following "ible" is how I have spiced up this concoction to my own liking.
Version 1: a can of Rotel tomato and green chillies, half a block of velveeta, melt cheese and add rotel, mix

I'm only making a small bowl full, the recipe is easy to adapt for larger amounts

Step 1: Ingrediants
Ground meat
diced peppers (green and jalapeno)
diced onion
( I cooked up a large batch of meat for a spaghetti sauce and kept out enough for this dip)
Velveeta cheese
Cream cheese
cheddar cheese
Spicy Salsa ( You can use the Rotel Tomato and green chillies or the Habanero version, Store bought salsa or in this case my "homemade" salsa https://www.instructables.com/id/Salsa-hack/

Step 2: Cube It
I use a small amount of cream cheese because I like the texture it adds, I use about a third the amount of cream cheese as velveeta. Cut the three cheeses into cubes to make melting easier, place in a microwavable bowl and add the sauce of your choice (about a cup) then microwave on high for 3 minutes, remove and stir
Step 3: Stick Your Meat in It
Add your meat to the cheese/salsa mix, mix it in and return to the microwave for another 3minutes then remove and stir again, if any lumps of cheese remain then microwave for another 2minutes
Step 4: Alternatives
A microwave works great but you have to work in short steps or you can burn the cheese around the top of the bowl, instead, you could make a double boiler by putting a couple inches of water in a pot the bowl your using just fits into and heating the water to a boil, stir the cheese a lot. another alternative would be using a crock pot

Thin the dip with milk and add to macaroni for a macNcheese
Add even more milk and make it a sauce for spaghetti

Step 5: Enjoy
That's it, your done, you could decorate the top of the dip with sliced pickled jalapenos or habanero slices to warn your guests whats in store but people know that if I've made it then they better have an adult beverage on hand.
Of course you can tone it down depending on the type of peppers and salsa you use.
