Intro: Spicy Creamy Chicken Taquitos

These taquitos are delicious and have a kick of spice, which is balanced off with a nice creaminess! Feel free to modify this recipe to make it more or less spicy!

STEP 1: Ingredients & Preparation

Ingredients for Taquitos
  • 1/3 cup of cream cheese (softened in the microwave for 30 seconds at half power)
  • 1 tablespoon of lime juice
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • a pinch of cayenne pepper
  • 1/4 cup taco sauce (I always use Ortega medium taco sauce - my favorite)
  • 2/3 cup grated pepper-jack cheese
  • 2 cups of cooked chicken - shredded or cut into small pieces
  • small tortillas
  • cooking spray & salt
  • *Optional: 3 tablespoons of chopped cilantro &/or 3 tablespoons of green onions
* Please note: This recipe makes about 12 taquitos and will give a mild to moderate level of spice with the ingredients listed. The spiciness also varies depending on how spicy the pepper-jack cheese is. To make it spicier, I sometimes throw a half a Jalapeno  into the blender with the taco sauce - and this kicks up the spice massively! Or, you could add more cayanne pepper in with the other dry ingredients - that will also do it!

I just wanted to thank "The Girl Who Ate Everything" (Love the website name) as I found the creamy taquito recipe on her site and have since modified it and am sharing the modified version here. If you don't have all the ingredients on hand, feel free to modify this and it'll still turn out absolutely delicious!

STEP 2: Mixing & Dry Ingredients

First, if you plan to bake these you'll need to preheat your oven to 425 degrees. Or, if you want to cook them on your stove you can do that instead. Since everything is already cooked - if you do it that way you'll just want to be sure the inside is well-heated and create a nice crisp outside on the tortilla shell.

Now you'll need a medium-sized bowl (a bigger one than pictured would be ideal) and put 1/3 cup of cream cheese in it. Then soften it in the microwave about 30 seconds at half power. Then add in the lime juice, taco sauce and dry ingredients - mix well.

Now add your pepper-jack cheese and mix well.

STEP 3: Chicken & Wrapping It Up

Now, chop up the chicken if it's not already shredded and add it to the bowl with the other ingredients and mix well. Pull out the tortillas and place a few tablespoons of the mixed ingredients in each one - the closer you lay it out to one side, the better. Then tightly roll it up.

After you've prepared all of them, then you'll want to spray them all with cooking spray and douse them with kosher (or regular) salt. You'll then want to put them in the oven for about 10-20 minutes (15 average) when you see that they have a nice brown crisp to the outside shell.

I make these all the time in fact just this week I made some with ground beef... The good thing is that you can make it in so many ways. Hi Holly...If you want to try this but with more of a crunch then put a little less in the tortilla and roll it up so it look kinda like a straw but thicker put a toothpick to hold it together so it wont open up. Then fill a frying pan with some cooking oil just enough to get it to cover the taquito. Then fry them till they're just golden brown which it will not take long... Remove, drain then get out the sour cream and/or some nacho cheese sauce for a dip and eat!! Great for munching at parties... =))
Sounds really good! :) Nice to try a variety of ingredients too...:) When I was a kid my mom used to make something similar to what you mentioned with the deep frying - they were SOOO good!

For what it is worth.. Technically, taquitos use corn tortillas. These would be flautas, which use flour tortillas. ;)

Taquitos are made with corn tortillas, Floutas are made with flour.
I could use a plate of these right about now.
