Introduction: Spicy Cucumber Salad
This sweet and sour Thai style spicy cucumber salad is really delicious and refreshing!
Ingredients:
Cucumbers - 700 grams
1 Red or white onion
½ Green hot pepper
Cilantro - a few sprigs
Mint - a few sprigs
Salt - 1 teaspoon
Sugar - 50 grams
Rice vinegar - 60 milliliters

Step 1:
Combine 50 grams of sugar, 1 teaspoon of salt and 60 ml of rice vinegar in a saucepan. Stir and warm up until the sugar dissolves.
Step 2:
Cut the cucumbers into 3 mm (1/8 inch) thick long slices.
Step 3:
Thinly slice 1 red onion. Mince ½ hot pepper; roughly chop a few sprigs pf cilantro and a few mint leaves. Combine in a bowl. Pour the vinegar mixture over the salad and marinade for half an hour.
Step 4:
Drain and transfer to salad bowl, garnish with mint, serve and enjoy! You might like our Asian style salad.
