Happy Halloween! We're a bit behind the eight ball this year - today being the 31st of October and everything! However, we did publish our Inferno Cookies a few weeks ago, which would also be perfect Halloween treats! But these Spooky Raw Cucumber Coffins really take the cake, or should I say, cucumber, hahaha.

They are ridiculously easy to make - they are raw, nut free, gluten free, oil free!!

Spooky Raw Cucumber Coffins

I'm surprised at how good blueberries taste with cucumber and beetroot dip! Try it out and if you love it let us know in the comments! If you don't have any fresh blueberries, you could substitute with sultanas or peas would also work well.

These Spooky Raw Cucumber Coffins will not make you feel full and heavy - you'll feel so light and airy, but satisfied. The best part is, you don't even have to wait till next Halloween to make or eat them! These are a great raw snack any time of the year! Spooky Raw Cucumber Coffins

The beetroot mixture in this one tends to loose its colour very quickly, so if you aren't eating these straight away, or your putting them in the fridge to take to a party later, then add some lemon or lime juice into it when blending to help retain the colour.

Step 1: Ingredients:

What you will need:

2 medium Lebanese Cucumbers (cut in half, lengthways)
1/2 medium Beetroot (peeled and grated)
1/2 cup of Sunflower Seeds
1 tsp Fresh Ginger (grated)
Generous sprinkle of Cumin Powder
1 Tbsp Fresh Mint (finely chopped)
8 Blueberries
6 or 7 Sprigs of Pea Sprouts (cut into one inch pieces)

Step 2:

Scoop the inside of the cucumber out with a teaspoon so you have a hollow coffin. Save the scooped out mixture.

Step 3:

Add the grated beetroot, sunflower seeds, ginger, cumin powder, mint and the scooped out cucumber mixture into a food process and blend until well incorporated. Then put this mixture into the coffins, evenly dividing it between each one.

Step 4:

Place the blueberries at one end, to make eyes, and then criss cross the pea sprouts over the beetroot mix to make a mummy like effect.

Step 5:

Take to a Halloween party and impress your friends!!
