Introduction: St Valentine's Bread
a lovely piece of bread for a lovely day.
Step 1: Ingredients
500 g flour
100 g durum wheat semoline
400 ml water
150 g sourdough
1 teaspoon of honey
15 g salt
15 g extravirgin olive oil
2 tablespoons sunflower seeds
2 tablespoons linen seeds
2 tablespoons sesame seeds
Step 2: Making
Mix all the ingredients together untill you have a smooth and thick dough.
Than let it sit in an oiled bowl and cover it with transparent film untill it raises twice its size.
Than take the dough from the bowl and place it on your table.
Step 3: Let's Fold It to Trap the Air Inside of It
press it down with your hands into a square or so.
now that you have a kid of square in front of you divide it in three parts in your mind, than take one side and fold it on the middle side, than take the other side and fold it on the middle side that is already covered by one side, now you should have a rectangle made by three layers of dough. now turn it and do the same thing with the rectangle you just made. these folds will trap air into the dough, so it will raise. press the sides of the twice folded dough to close them and let it sit for 30 minutes in the oiled bowl.
than take it out from the bowl and give it the shape that you want, for example a heart, watch out not to stress or hit the dough or it will deflate. than let it rest for another 3 or 4 hours.
Step 4: Cook It
Place it on your oven tray, cut a small cross in the center and put the tray in the oven pre-heated at 210°C or 410 F for 15 minutes and than lower the temperature at 180°C or 356 F for 20 or 25 minutes.
Once cooked place on a grid so it won't get moisted.
