Introduction: Starbucks Iced Lemon Pound Cake Copycat Recipe
My favorite kind of cake is lemon
So it is no surprise that every time I go to Starbucks I always get the iced lemon pound cake
I would eat the sweet and sour lemon pound cake all day if I could
Who doesn't love lemon pound cake
I decided to make my own iced lemon pound cake just like Starbucks
And it even taste better than Starbucks
It also is very easy to make
But most importantly it takes delicious because it is a rich and buttery cake even though it only has 2 tablespoons butter
Who wouldn't want to make their own iced lemon pound cake just like Starbucks
Step 1: Ingredients
1 1/2 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Two eggs
1 cup white sugar
2 tablespoons of softened butter
1 teaspoon vanilla extract
1 teaspoon lemon extract optional
1/3 cup lemon juice
1/2 cup vegetable oil
For the lemon icing:
One cup of powdered sugar
2 tablespoons of whole milk
1/2 teaspoon lemon extract or lemon juice
Step 2: Steps to Make the Lemon Pound Cake
Preheat your oven to 350°F
In a medium bowl, sift the flour, Baking soda, and baking powder
Also add in the salt
Set the medium bowl with the dry ingredients aside
In a large bowl, beat together the sugar and butter until soft and fluffy
Start to beat in the two eggs gradually
Next add in the vanilla extract and lemon juice and also beat them in together
Take the medium bowl with the dry ingredients and put in the dry ingredients 1/3 cup at a time into the wet ingredients
Continue to do this until all the dry ingredients are mixed into the wet ingredients
Next mix in the vegetable oil
Pour the batter into a well greased loaf pan and bake for 45 minutes or until a toothpick stuck in the center of the cake comes out clean
Step 3: Steps to Make the Icing
Beat together the powdered sugar and milk
Add in the lemon extract or lemon juice and also beat that in together
Sprint the lemon icing on to the cooled lemon pound cake
Step 4: Results
I am really happy with how this Lemon Pound Cake turned out
It is fluffy and rich with a sweet and sour lemon flavor
And it only has a cup of sugar in the cake
I will definitely be making this Lemon Pound Cake again

I made this for dessert for my family tonight and everyone loved it. I didn't have a loaf pan so I made it as cupcakes in a muffin tin with a reduced cooking time. Still turns out great. :)

I don't have a picture, but I made it and I love it! Had to double the recipe because the pan I used is bigger, was not a problem. I don't know the Starbucks version, but your recipe is definitely a keeper. Super easy and really delicious!!
