Introduction: Balsamic and Feta Stuffed Mushrooms
Quick and easy, this low calorie dish can be an appetizer or snack.
Ingredients:
- Half a pound of button mushrooms
- 2 teaspoons on olive oil
- 2 teaspoons of balsamic vinegar
- 1-2 ounces of crumbled feta cheese
- A pinch salt, black pepper, garlic powder and paprika
Take the stems out of the mushrooms and wipe them out with a damp towel.
Put them in a bowl and add: olive oil, balsamic vinegar, a pinch of salt, black pepper and garlic powder. Toss until coated.
Put mushrooms cap down on a baking sheet. Add some feta cheese to the stem cavity. Sprinkle some paprika on top.
Roast at 400 degrees for about 10 minutes or until the cheese is melted.

They were delicious! But we might put them on a rack next time. Mushrooms give off a LOT of moisture as they cook so they were a bit messy to eat.
We had them with marinated fried chicken and the two went very nicely together.
