Introduction: Super PI Raw Chocolate Superfood Pie
Super simple and super delicious!
This Super PI is rich and delicious and sure to be a crowd pleaser. Not only is it delectably delicious, it's full of super nutritious ingredients that will delight your taste buds.
Step 1: Before You Get Started
As you are preparing to make this pie, 1 -4 hours ahead of time, (or as your gathering your ingredients) soak 1 cup cashews or macadamia nuts in pure filtered water. This is an ingredient for the chocolate pudding. Soaked cashews are softer and add a creamier texture to the pudding. It is not absolutely required, but serves as a great way to increase the creamyness yum factor. :)
Step 2: Crust
Super simple with only 2 ingredients (or 3 for a chocolate crust)
1 cups nuts (I chose pecans for this pie but walnuts, almonds, macadamias or your favorite nut will work)
2 -4 TBS pure real maple syrup
2 TBS raw cacao powder (optional for a chocolate crust)
In a food processor or blender, add nuts, maple and chocolate if using. Process nuts till they look like a nut crumble as pictured. Next press into a 9" pie dish.
Step 3: Chocolate Pudding - Super Super Super!
Ingredients:
1 large ripe avocado peeled and deseeded (super food)
1 cup raw cashews or macadamia nuts soaked in water for 1-4 hours.
1/4 cups coconut oil (super food)
1/2 cup honey (super food)
1/2 cup raw cacao powder (super food)
1 TBS vanilla
1/2 tsp salt
3/4 cup water (or to achieve desired consistency.
5 drops high quality pure essential oil for flavor (optional) suggestions: orange, peppermint, lavender
Add ingredients in the order listed to a blender or food processor blend or process all ingredients till very smooth. Pour pudding into pie crust. Cover and refrigerate for 2-4 hours to allow pie to solidify before serving.
Cut up, bless and enjoy indulging without feeling guilty!
This also makes a wonderful freezer pie.
Tips: to decrease the sugar content reduce honey in half and add stevia to taste.
Both stevia and raw cacao powder can be found at your local health food store.

Oh my yum! When I saw the title I knew this was you! :) Love the addition of nuts and avocado too! Really wish we had a health food store in this town...time to move! :)
