Intro: Sweet & Spiced Oat-Cakes


These are essentially fruit flapjacks with spices. Soft, sweet, buttery and flavoursome.
High in fat, sugar and carbohydrate, I made them for easy breakfasts.
This is an original recipe, I made it up myself.

STEP 1: Ingredients


>Rolled oat flakes - 250g
>Salted butter - 200g
>Honey - 100g
>Dried chopped dates - 100g
>Unrefined raw cane sugar - 50g
>Glace cherries - 50g
>Dried powdered ginger- 4 level tsp
>Dried powdered cinnamon - 4 level tsp
>Dried cloves - 6
>Dried (green) cardamom pod - 9 seeds from inside

Other fruit of the same mass can be substituted, sugars can be swapped, and I guess you could use different fat too. I didn't use the bag of mixed fruit in this batch, but initially intended to.



STEP 2: Preparation


Switch your oven on to 175oC.
On a low heat, melt the butter, sugar and honey in a small saucepan.
Chop the dates and cherries into small pieces, as you would like.
Grind the cloves and cardamom seeds with some of the sugar, mix well into the oats.
Add the ginger and cinnamon to the oats and mix well.
Toss the fruit well in the oats.
Pour in the melted butter & sugars, mix well.

STEP 3: Baking


Lightly butter a baking tin / tins of your liking / choice.
Press the mixture firmly into the baking tin / tins.
Cook for 20 min @ 175oC
Cover with foil and allow to cool.
They should turn out of a tin fairly easily being buttery.

i made these at home but i didnt press them in the tins enough so they were really crumbly
I think I'm going to try this without the cane sugar and with applesauce instead of butter. I'm sure they won't be as good, but I'm definitely looking for something like this for breakfast without the extra fat and sugar!
Apple sauce sounds interesting, I would consider adding something like baking powder to a mixture with a higher water-content - what do you think?

That sounds like a good idea. I've been experimenting with vital wheat gluten for creating volume in baked goods, but in this instance baking powder seems more appropriate. Or corn starch!

I used too much butter, they didn't hold together very well, but they tasted great!
They do look good, I'd love to try a couple.
Oh they look really tasty... I need food like this... I lose weight by simply breathing so this looks just the ticket!
