When microwaves came out to residential use in the 1970’s; I went to a microwave cooking class. I believe a lot of this recipe is from this class as I recall. Either way, this Carmel corn recipe is simply delicious and very easy to make. Children enjoy helping out because once you pour the hot syrup over the popcorn in the brown grocery bag the rest is easy and fun-just shake, put back in the microwave and shake. Clean up is simple and fun. Just throw away the bag. This recipe turns out perfect every time. To turn out delicious and buttery one has to make sure to use butter and not margarine and be careful attention when cooking the syrup to not overcook. See the following instructions and the final product will be awesome!

Step 1: INGREDIENTS

18 Cups Popped Popcorn (preferably air popped) & a Brown Grocery Bag
1 cup brown sugar

¼ cup clear corn syrup

½ cup (1 stick) butter

½ teaspoon salt

1 teaspoon vanilla

½ teaspoon baking soda

Step 2: DIRECTIONS

(First cut a large brown grocery bag 1/4 off the top about 5 inches down as shown in the picture) put the 18 cups of popped popcorn in the bag

In a large glass microwavable bowl take the 1 stick of butter (preferably room temperature) and trace the inside of the upper rim of the bowl or if you have a (2 quart glass Pyrex measuring glass that would be the best-mine broke)with the stick of butter. This will help the syrup from over flowing when the temperature rises.

Put the stick of butter in the bowl with the 1 cup of light brown sugar, 1/4 cup of corn syrup and 1/2 teaspoon of salt. Microwave this on full power for two minutes. Take out and stir and add the 1 teaspoon of vanilla and 1/2 teaspoon of baking soda. Mix this well with wood spoon before putting back in the microwave. Microwave for another three minutes. Watch for the one and one half minute mark and take out and stir (be careful and use mitts as the syrup is hot) continue to microwave for the other one and one half minute. The syrup will be a beautiful buttery Carmel brown in color.The time may be less depending on your microwave. I just got a new microwave and mine only took 2 1/2 minutes this time. It should be the color of the photo I provided.

Step 3: Finishing Up

Take the syrup out of the microwave and pour over the popcorn. Scrape all the syrup out of the bowl and stir over the popcorn with the wood spoon. Stir well and shake the bag. Put in the microwave on high for one minute. Take out of the microwave and open the bag and stir with the wood spoon and shake well, put back in the microwave for one minute. Open microwave, stir, shake, put back in microwave for 30 seconds. Open microwave, stir, shake put back in microwave for 30 seconds.

Open microwave stir and pour the Carmel corn out on to wax paper to cool to room temperature. Throw the bag away. Enjoy!
