Introduction: Taco Slaw - Repollo Y Lima
So a few weeks ago I visited my aunt who lives in So Cal. She had me help her make this cabbage/cilantro/lime topping that I have now been addicted to ever since.
Ingredients:
1 pkg of cole slaw mix, chopped fine
juice of 6 limes
1 bunch cilantro chopped fine
A few pickled jalapenos minced
vinegar from jalapeno can
salt
onion powder
garlic powder
*Optional items I would have used but did not have on hand*
1 diced cucumber
1/2 diced onion
Mix all of your ingredients in a bowl and let it sit until the cabbage is tangy, about 30 minutes. Top your tacos (in this case, carne asada tacos) and eat. Refrigerate leftovers, tastes even better the next day. I've even added shrimp and ate it with chips, so good!
