Introduction: The Perfect Pumpkin Cookies
This pumpkin cookie recipe is fantastic for anyone looking to bake a new fall treat! It has been passed down though my family, and it's about time to share it with the world. The goal of this simple recipe is soft, fluffy, delicious cookies every time!
Supplies
Pumpkin Cookies
· 2 cups butter, softened (4 sticks)
· 2 cups granulated sugar
· 2 teaspoons baking powder
· 2 teaspoons baking soda
· 1 teaspoon salt
· 1 ½ teaspoon ground cinnamon
· 1 ½ teaspoon ground nutmeg
· 2 eggs
· 2 teaspoons vanilla
· 1 15- ounce can pumpkin
· 4 cups all-purpose flour
Cream Cheese Frosting:
· 1/2 cup butter, slightly softened
· 1 8-oz package cream cheese, softened
· 3 ½ Cups powdered sugar
· 1 teaspoon vanilla
· ground cinnamon sprinkled on top
*Hint: It is helpful to have a mixer to complete this recipe.*
Step 1:
Preheat your oven to 350 degrees
Step 2:
Mix together baking powder, baking soda, salt, and flour in a bowl, and set aside to use later.
Step 3:
Use a hand mixer to bet together the butter, sugar, cinnamon, nutmeg, eggs, vanilla, and pumpkin until combined. Make sure to scrape the sides of the bowl as you go so everything gets incorporated. This mixture will be very wet.
Step 4:
Slowly mix in the dry ingredients that are already mixed. Makes sure to do this in small increments so everything combines completely. The batter will be very fluffy.
Step 5:
Divide the dough into 1-2 tbs. sized scoops on a cookies sheet. Bake for 12-14 minute until the cookies have risen and are starting to brown.
Step 6:
Beat together the butter, cream cheese, powdered sugar, and vanilla until light and creamy.
Step 7:
Spread the frosting on top of the cookies and sprinkle with cinnamon to finish.
