Introduction: The Ultimate Seinfeld Sandwich - Marble Gyro -
If you've watched Seinfeld, you probably remember the Queensboro plaza gyro, the one makes you get off the train. When I first saw the contest, this was the first thing that came to my mind. Seinfeld has lots of iconic moments contains foods like chocolate babka, soup, black n white cookie, marble rye, gyro, Chinese food and lots more... So I made a sandwich in gyro concept that contains as much as the favourites of Jerry, Elaine, George and Kramer. Gyro first, marble pita for marble rye, mustard and reverse-seared smoked steak as deli meat.
So here you go, the ultimate Seinfeld Sandwich.
- 1 cup of flour
- 1/2 cup of warm water
- 1 teaspoon dry yeast
- 1 teaspoon of sugar
- 1/4 teaspoon of salt
- 1 tablespoon of sugar free cocoa powder
- 2 teaspoon of oil
- 2 bowls
- spoon for mixing
Reverse seared smoked steak:
- any meat thick as 1-1.5 inches
- wood chips suitable for smoked meat like oak
- a container
- pan and steamer basket - Use smoker box if you have-
Dressings and veggies:
- 1/2 tomato
- 1 cucumber
- 1/2 onion
- 1 clove of garlic
- 1 teaspoon of lemon juice
- 1/4 cup of yoghurt
- Dijon mustard
Step 1: Marble Pita Bread
Pour all the warm water into the bowl.
Add all of the dry yeast and sugar. Stir until its dissolved.
Add 1/4 cup of flour. Mix.
Wait for 7-8 minutes to see the bubbles.
In another bowl, mix cocoa, half of the remaining flour, 1 pinch salt and 1 teaspoon oil.
Add half of the yeast mix. Stir until its a shaggy mass.
To the remaining yeast mix, add the other half of the remaining flour, 1 pinch salt and 1 teaspoon oil.
Stir until its a shaggy mass.
Empty both bowls to a floured surface. Start kneading both.
Wipe inside of a bowl with oil and put both doughs in it. Cover the bowl and rest it 40 min.
After 40 minutes, take both doughs to a floured surface and knead a little.
Then put one over another.
Cut in half.
Take one half and shape it like a spiral.
Using a floured rolling pin, roll one of the pieces into a circle that’s a quarter-inch thick.
On the stovetop, heat a skillet. Add a few drops of water to the skillet, if they sizzle immediately, the skillet is ready. Put the rolled out pita on the skillet, wait for it to puff, flip it and cook 1-2 minutes the other side.
Marble Pita bread is ready.
Step 2: Reverse Seared Smoked Steak
Take the steak and salt its both sides with 1 tablespoon of salt.
Put it in a container and rest in the refrigerator for 2 hours.
After 2 hours, take the steak out off the refrigerator. Wipe the salt.
Prepare 1 tablespoon of black pepper and coriander.
After 10 minutes cover the meat with this mix, both sides.
Heat the pan, test with few drops of water, if they sizzle immediately, the pan is heated well.
Put the wood chips in the pan, place steamer basket over them, and place the steak on it. Put the lid on the pan.
You'll see the smoke leaking. Keep the heat on for 10 minutes.
Then turn down the heat. Smoke for 10 minutes also without uncovering the pan.
Heat a skillet, test with few drops of water, if they sizzle immediately, the pan is heated well.
Uncover the pan, take the steak and place on heated skillet. Sear both sides for 5 minutes, if you like the steak rare, sear 3-4 minutes per sides.
Turn down the heat, put the steak to a container. Cover the container with foil. Rest is for 10 minutes.
Step 3: Assemble Gyro :P
Place yoghurt, half of the cucumber, garlic, 1 teaspoon lemon juice, 1 teaspoon olive oil in a blender. Blend until smooth; set aside. Tzatziki alike sauce is ready.
Dice tomato, slice remained cucumber, chop lettuce, slice onion.
Slice the smoked steak.
Lay the marble pita bread, put the slices of meat, put the veggies, season as you like, add tzatziki and mustard.
Roll it and wrap with foil.
