Introduction: Tomato Bruschetta With Cream Cheese and Mozzarella

Since I found this recipe, I keep making bruschettas pretty frequently. They are simple to prepare and they have excellent taste.

Pay attention to the cherry tomatoes you use - they play a significant role in overall result. They should be sweet.

Mozzarella burrata is softer than other types of mozzarella. You might need to try few variations from your local store to find the one which is soft inside.

Supplies

Ingredients:

  • Fresh bread
  • Garlic cloves
  • Dried tomato paste
  • Cream cheese
  • Mozzarella burrata
  • Cherry tomatoes
  • Fresh basil

Optional tools:

  • Grill pan
  • Food clamp
  • Bread knife

Step 1: Grill the Bread

Cut few pieces of bread. This is a wonderful possibility to try out your bread knife. But don't worry if you don't have one.

I've used my grill pan to grill the bread. Usually I use my kitchen clamp to turn over pieces of bread, but my son decided to play with it while I was grilling, so I had to do it with my hands.

Heat should not be too high, so you don't burn the bread, like I did. They should become just a little crusty.

Step 2: Grill Cherry Tomatoes

Mix cherry tomatoes with some oil olive, salt and pepper and put them for 10 minutes into a stove preheated to 180C/356F. You could probably grill them too, but I haven't tried that.

Step 3: Cream Cheese With Mozzarella

Use fork to mix Mozzarella Buffalo with cream cheese. You could use Ricotta cheese if you prefer more salty flavor.

Step 4: Putting It All Together

Cut garlic clove in half and rub it into a grilled bread piece. Put thin layer of dried tomato paste on top. Some people prefer a thicker layer, so you can experiment here. Put a lot of cream cheese with mozzarella mix on top of the dried tomato. Add grilled cherry tomatoes with basil leaves and finish up with a touch of olive oil and fresh pepper.
