Introduction: Tostadas

There are three words to describe this meal:  CHEAP, EASY, DELICIOUS. 

Step 1: Ingredients

6 corn tortillas
1 cans of whole pinto beans drained
1/4 cup milk
1 cup shredded cheese divided
shredded lettuce
diced tomato
salsa for topping
oil for frying

Step 2: Fry 'Em Up!

Heat your oil in a frying pan on medium high heat. Dip a tortilla in the oil, it should sizzle. Wait about a minute and a half and flip tortilla over, fry for another minute, drain on paper towel lined plate. Continue this process for remaining tortillas.

Step 3: Smashin' Beans!

In a pot on medium heat, add the beans and milk. Smash the beans with a potato masher (it’s a bean masher in my house) until smooth. Add 1/2 cup of the cheese and stir until the cheese melts.

Step 4: Assemble and Eat!

Make an assembly line: tostadas, beans, cheese, lettuce, tomatoes, salsa. Spread beans onto the tostada, top with cheese, lettuce, tomatoes then salsa. If you have guacamole, add it! This is a very budget friendly recipe and you can substitute the beans for ground beef, chicken or fish. Makes 6. Enjoy!
