Introduction: Two-Tone Coffee and Cardamom Cookies

These cookies are very buttery despite using non dairy butter. I made a variation before, using golden vegetable shortening, and the cookies were also buttery. - In other words, if you do not have diet restriction nor living plant-based, dairy butter would definitely also give wonderful buttery result :)

You can subs the coffee granules with decaffeinated coffee, if you prefer so.

Give this recipe a try, I have a strong feeling you will be hooked. The combination of coffee, cardamom, and dark chocolate really compliment each other, if I may say so myself :)

Step 1: Ingredients

  • 1 c and 1 tbsp flour
  • 1/4 c and 1 tbsp sugar
  • 115 g vegan butter/yellow vegetable shortening
  • 1/2 tsp vanilla essence
  • 4 green cardamom, crushed
  • 1/4 tsp each instant coffee granules, flax meal, chia seed

Step 2: Instruction

  • Mix dry ingredients in a bowl, set aside
  • In a separate bowl, beat butter with 1 tbsp sugar
  • Beat in vanilla
  • Beat dry mixture into whipped butter a little at a time to combine, then knead with hands
  • Roll dough flat and cut with cookie cutter
  • Bake cookies at preheated 350 F for 8 mins (convection oven)
  • Cool cookies on rack then dip cookies in melted dark chocolate (100 g, melted in microwave at 30 seconds interval)
