Introduction: Valentine Cake Cookies

These cake cookies are delicious and pretty and yet so simple to whip up for your loved one on Valentine's Day. You don't need to spend a whole lot of money or use any fancy ingredients either! These cake cookies are sure to impress anyone and you can make them on any special occasion by using other flavors or decorations.

Step 1: Basic Ingredients and Tools

As I said before, nothing fancy here. You probably have all these ingredients already in your fridge or in your pantry.

Ingredients:

1. One Strawberry Cake Mix (It could be any flavor or brand, whatever your tastebuds like best {cough...cough....chocolate}... but for the theme of V Day I am using Strawberry)
2. 2 large eggs
3. 1/3 cup of oil
4. 4 ounces of package of cream cheese, room temperature
5. 2 Tbsp of softened butter
6. 1/2 teaspoon of vanilla extract
7. 1/2 cup of powdered sugar
8. Colored Sprinkles (pick whatever you think looks pretty, I am using Wilton's Sprinkles Micro Hearts from Micheal's)

Essential Tools:

1. Two medium size bowls
2. Rubber spatula
3. One cookie sheet
4. Hand held mixer
5. Cooling rack (you don't need it but I like using them)

Step 2: Mixing and Baking

Making these bad boys are simple to make.

Directions for the cake cookies:

First preheat the oven to 325 degrees F and lightly grease cookie sheets.

In a medium bowl, pour cake mix in a bowl and add the eggs and oil and mix until it is well blended (batter will be a little on the sticky side, so don't worry). After that, roll dough into 1 inch balls and place them onto the prepared cookie sheet. Bake for about 10-12 min.

Once they are done baking, let them cool on the baking sheet for a couple of minutes before removing them onto the wire racks (or onto another cool cookie sheet). 

Step 3: Making the Filling

While your cookies are cooling off you can start making the yummy cream cheese filling. Now this CC filling is not so cream cheesey (I know that's not a word but it is the perfect way to describe it) so that anybody enjoys the great flavor.

Directions:

Place the cream cheese, butter, powdered sugar, and vanilla extract in a large bowl (or else the powdered sugar is going to go everywhere). With a hand held mixer, mix on low until all the ingredients are incorporated and it looks smooth.


Step 4: Almost Done

After your done making the cream cheese filling and your cookies have cooled off, it is time to make them look like a sandwich!

Pour the sprinkles into a small bowl and set aside.

With a butter knife, spread a tablespoon or two (however much you want in them) on one cookie. Then get another cookie with its bottom side down, press and twist onto the cream cheese cookie. After that, take your cookie sandwich and press it cream cheese side down onto the sprinkles and rotate it until all your cream cheese is hidden.

Step 5: Ready to Eat!!!

Once your done, you can eat them right away or give them as a Valentine's gift. Like I said before, you can make them on any occasion with different cake mixes or even your own preferred filling. Hope you enjoy them!!!
