Vegan Dill Pickle Mac N Cheese Casserole

Introduction: Vegan Dill Pickle Mac N Cheese Casserole

Thanks to Daiya's super easy mac and cheese sauce, this little casserole is the perfect snack for you and your unannounced peeps stopping by out of nowhere.

Like why do people do that? On second thought, give them soda crackers and keep this for yourself.

Want to make this gluten free? Just use GF breadcrumbs as Daiya's Mac n cheese kit is already GF.

Step 1: Assemble Your Kit

- Daiya Mac n Cheese (I use cheddar, but try the other flavours if you're feeling adventurous.)
- A couple baby dill pickles (sliced thinly)
- Dill, basil, salt and pepper (to taste)
- Bread crumbs from 1-2 slices bread
- Margarine 1-1.5 TBSP cut into tiny bits

Step 2: Wooo Hoooo, Let's Get This Party Started

Make the Mac n cheese according to package.

Grease a casserole dish. I use a medium sized one that way there is more surface area for the toppings.

Add the chopped dill pickles, dill, basil, salt and pepper to taste.

Mix it up, kittens.

Step 3: Topping, La Piece De Resistance

Shake your breadcrumbs on the top and don't pat it down (makes a better, crustier topping. Just take my word).

Place little pats of marg on top. Check out the pic for a general idea.

Step 4: Into the Oven and Out in 2 Minutes. I'm Telling You the Truth. This Is One Easy Snack Casserole.

Throw that bad boy under the broiler for about 2 minutes. Keep an eye on it after 1 minute. Like stand at your oven and check every 20 seconds. It shouldn't take more than 2-3 minutes. Although 3 minutes may be pushing it. Yeh, 2 minutes is good.

Take it out and eat that deliciousness!

Right on. Thanks! Jalepeno rings work great too.
