Introduction: Vegan Alfredo Sauce With Delight Soy, Spinach, Mushrooms, and Squash

Quick Dinner featuring Whole Foods Vegan Alfredo Sauce.  This sauce is in the refrigerated section and made in the store.

1 cup sliced white mushrooms or mushrooms of choice
1/2 cup chopped onion
3/4 cup chopped  yellow & zucchini squash
3/4 cup chopped fresh baby spinach
2 Delight Soy Patties ( chopped
salt, pepper, garlic powder (or minced garlic) to taste.
**served over whole wheat angel hair pasta cooked according to directions on package. Would also be great served over spaghetti squash.

  1. Wash and cut all vegetables and soy delight patties.
  2. In non-stick pan or heavy seasoned cast iron pan, saute vegetables and soy patties over medium heat. (suggestion -use a little water, vegetable broth, or lemon juice to saute instead of oil)
  3. Sprinkle mix with salt, pepper, and garlic powder for about 5 minutes until vegetables are soft.
  4. Add container of Whole Foods Vegan Alfredo sauce and simmer on low for 15-20 minutes for flavors to blend.
  5. Serve over pasta of choice.

    Thank you! A friend of mine turned me onto the Vegan Alfredo Sauce at Whole Foods. I'm not a huge Alfredo person but thought it might be fun to try for my friends that do like Alfredo and are open to trying some of my meatless creations. I love the Delight Soy Patties especially served Buffalo style, I hope you can find them where you live.
