Intro: Veggie Gyro

Tired of making boca burgers? Treat yourself to some Veggie goodness. And it has seitan.

STEP 1: Ingredients:

-Tzatziki sauce
4 cups plain yogurt
1/2 cup olive oil
1 teaspoon salt
1/2 Lemon's juice.
1 unpeeled cucumber chopped fine
1 clove garlic salt
Garlic Powder

-Gyros
1 tomato cut into slivers
1 onion cut into pieces
Some lettuce
2 packs of white wave seitan
Pita
lots of Cavenders Greek Allspice.
Feta

STEP 2: Tzatsiki Sauce

This couldn't be easier. Mix Yogurt, Oil, spices and cucumber in a bowl with a whisk.

STEP 3: Gyro

Cut the seitan into strips.

In a pan on medium heat cook the seitan with olive oil and a lot of cavenders.
I add some water to keep the seitan juicy.

STEP 4: Pitas

Heat the pitas in a toaster oven until soft. Wrap in parchment paper if you would like. Eat em.

Mmm, this sounds delicious. I love Greek food, so I'm definitely gonna pick up the supplies on my next grocery run!
does the seitan you use have spices in it?  i make my own seitan, so i want to know what to put in it.  or greek seasoning would work.

You have absolutely made my day! I became a vegetarian 30 years ago, and the only thing I ever missed from those days was Gyros. No longer! I tried this recipe out, and it is very tasty; surprisingly authentic. I'd not have believed that seitan would fry up so right. A few suggestions: The amount of tzatziki you call for is enough to sink a battleship -- I made 1/4 that amount for three or four people and that was OK. I used a little less olive oil, more salt, and a lot more (real) garlic. I crushed what -- with your amount -- would be 8 cloves. Obviously, I didn't use any garlic salt or powder! I fried the seitan for about 5 minutes with a little olive oil on med-high in a nonstick skillet; I like a bit of crunch here and there. I'd never used Cavender's before, but it's the right thing. I used 8oz of Sweet Earth's "Grand Life" seitan, and could have stood to have used a little more. All in all, this is supremely excellent, and I'm so glad I tried it. Thank you!
Thanks man! you are right it makes a TON of tzatziki. But i love that stuff and use it for the next few days on everything. -Joe
