Introduction: Watermelon Salad

This simple, savory, and super refreshing watermelon salad recipe is the only thing I want to eat when trying to beat the summer heat. Not only is it delicious, it's very easy to make!

Step 1: Recipe

8 heaping cups of cubed seedless watermelon
1/4 cup chopped cilantro
1/4 cup chopped mint
1/3 cup fresh lime juice
4 oz queso fresco
1/4 tsp salt
1/2 tsp chili flakes

Step 2: How to Cube Watermelon

Cut the watermelon into 1" thick slices. Remove the rind and cut the slice into 1" strips vertically and then turn your knife (or cutting board) and cut the strips into 1" cubes.

Set aside.

Step 3: Prepping the Remaining Ingredients

1. Remove a handful of mint leaves (1/4 cup when chopped) from their stems and using a chefs knife, finely chop them. Set aside.

2. Cut of the majority of the exposed stems off approx. 10 stems of cilantro (going for 1/4 cup) and chop the leaves finely. Set aside.

3. Juice 1/3 cup of fresh lime juice.

4. Using your fingers, crumble 4 oz of queso fresco into small pieces.

Step 4: Layers of Yum

In a large bowl, starting with the watermelon, add all the prepared ingredients along with the salt and chili flakes.

Step 5: Mix & Serve

Using a soft edged utensil (a wooden spoon is perfect), gently mix all the salad ingredients together.

Cover the bowl and let it chill in the fridge for 1 hour.

Remove from the fridge and gently stir the salad one more time.

Plate and serve.
