Introduction: Yummy Lemon-Coconut Pixies
Hello! Here is a great recipe to make a yummy, light cookie that is great for anytime! Enjoy :)
Prep time: 15 mins | Cook time: 15 mins | Makes approximately 2 dozen cookies

1/4 cup softened butter
1 cup sugar
2 eggs
2 teaspoons lemon zest
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup sweetened coconut flakes
powdered sugar

Step 2: How to Pick/Zest a Lemon
When choosing a lemon that you will be zesting, look for the nicest 'skin' because that is the part you will be using. I usually smell the fruit after checking it for blemishes and bruises to smell if it is the perfect ripeness. You can tell this by seeing if the lemon smells yummy like a lemon, or an orange smells like a juicy orange! (Just a tip)
To zest the lemon, first wash it. It is also a good idea to buy organic, but I will leave that up to you! Use a fine grater to rub the skin of the lemon. The first picture is my zesting, and the second is the comparison of a zested lemon vs. a non zested lemon. (Zest to the almost-white part.)

Step 3: Mix
In this step, we will be beating together the butter, sugar, eggs, and lemon in a large bowl. The mixture will get thick.
tip: When mixing together liquids and powders, it is a good idea to first mix together the powder (sugar and lemon for us) to create a valley in the center where the liquids will be poured into. As shown in the picture below.

Step 4: More Mixing
In a small bowl, mix together the flour, baking powder, and salt.
I personally found it easier to mix everything together in the measuring cup to have less dishes :)

Step 5: Adding
Slowly add the flour mixture to the butter mixture, beating until blended and smooth. This will be a little thick! Stir in coconut once blended well.
Step 6: Waiting
Cover the dough and let sit in the refrigerator for about an hour or until firm enough to handle. (We will be rolling the dough into balls.)
Step 7: Roll
Grab a spoon and two plates.
Shape dough into 1 inch balls. (on one plate)
Roll the bolls in the powdered sugar (on the other plate)
TIP: Wash your hands often, or your hands will get too sticky to form the balls properly. Also, shape all the dough before rolling them all in the powdered sugar, this will cut back on time.
Place the balls 2 inches apart on the cookie sheet. You should be able to fit a dozen at a time. Press them down a little to help them bake evenly.

Heat the oven to 300 degrees.
Bake for 15 minutes.
Tip: Take off the cookie sheet as soon as you take them out of the oven to let them cool faster.
