This mixed vegetable recipe is one of my moms best and my favourite. I usually like it with roti bread but you can have it your way. All you need is lots of colorful, healthy vegetables and your good to go. I used 6-7 vegetables but you can add more if you want to, just keep in mind which veg takes long to be cooked, add them in the first round.

Step 1: Ingredients

A recipe for 5-6:

Vegetable:
  • Purple onion- 1, large size,
  • Cabbage - half of a medium sized cabbage,
  • Cauliflower - 1/3 of a medium sized cauliflower,
  • Garlic - 1 clove,
  • Potato - 2 small size,
  • Carrot - 1 medium size,
  • Cucumber - 1 medium size,
  • Green chilli - 3-4, 
  • Tomato - 2 medium size.
Other ingredients:
  • Corn flour - 2 tbsp,
  • Soybean oil - 1 tbsp,
  • Salt - 2 tsp
  • Sugar - 1 tsp.

Step 2: Cutting the Vegetables

Wash the vegetables and cut them into pieces as shown in the picture of this step. Don't cut them all into small pieces, you'll have to cut each of them differently.

Cut the potatoes, cucumber and tomatoes into medium size dices/ cubes (0.5X1 inch), though it's not necessary to cut them into 0.5X1 inch exactly but try to.
Cut the onions into slices,
Cut the carrot into thin triangular slices,
Cut the cauliflower and cabbage as shown in the picture, try keeping the pieces relatively bigger than the other peices,
Shuck a clove of garlic,
And, cut the green chillies vertically.

Step 3: Cooking- Round-1

Take a pan or pot and add all the chopped vegetables in it, except for the chopped cauliflower and tomatoes.

Add 1 tsp of sugar, 2 tsp of salt and half cup of water to the vegetables, and mix them really well.
Now allow the vegetables to cook for 8-10 minutes in medium/high heat (375°-449°F),
Do not stir frequently.

Step 4: Cooking: Round-2

After 8-10 minutes of the first round, add 1 tbsp of soybean oil to the vegetables,
Add the chopped cauliflower and tomatoes in the pot, with the rest of the vegetables and mix them together. Mix carefully, try not to break the chopped cauliflower into small pieces.
Mix 2 tbsp of corn flour with half cup of water, and add the syrup to the vegetables.
Cover the pot and wait for another 8-10 minutes in medium heat (325°F-374° F).

There, yummy mixed veggies ready-to-serve! It's healthy and tasty, give it a try and let me know how yours turned out :)

    Great instructable - I've made this recipe loads of times at home!

    The recipe I use is slightly different - I add pepper instead of sugar!

    I tried out this recipe and i have to say - Its pretty good :D
