Intro: Zucchini Noodles With Pesto

I have been wanting to make Zucchini noddles for the longest time! I finally did it and here it is....

STEP 1: Spiral Slicer

For the longest time I had been looking for a veggie spiral slicer or "spiralizer". When I finally found one, I wasn't too convinced with its quality, so I didn't get it. Honestly, this was the only thing holding me back from trying to make zucchini noddles. Thanks to Homdox, I got this Veggie Spiral Slicer. It was such a breeze to use! And clean up was quick and simple thanks to the cleaning brush it came with! I did not get to use the vegetable peeler this time around but I'm eager to put it to use. It also comes with a storage bag, which I don't know about you, but I think that it is just too adorable!

STEP 2: Get Your Zucchini Ready

I ended up using only one zucchini, which was plenty for my single-gal meal :)

It is really quite simple, just rinse the zucchini, cut off the end and place in the spiral slicer. All you have to do is twist it. REALNESS ALERT: One of my concerns was that it would be too hard for me to "spin" or turn the zucchini and it would just end up getting stuck in the blades. THANK GOODNESS this didn't happened! I guess when you have a quality product and fresh produce everything just runs smoothly!

STEP 3: Noodles & Pesto

Once I had my zucchini noodles all I did was add my favorite basil pesto sauce. Of course I originally wanted to make my own pesto (which I have done in the past, and it's quite simple to do) but I was starting to get hangry and decided to take a quick shortcut :) Don't judge me, it's just that I did not have the time for that today :)

It was soo good, even though I didn't add any sort of parmesan cheese or anything else for that matter. It was the perfect lunch meal after a morning hike!

Thanks! No I did not heat it up, like I mentioned in the post I was starving!! :) It was great just as is. However, I think if would also taste very good if you heat it up with a little olive oil. Let me know if you give it a try!

Today, this morning I 'll have oats with raisins, and a tip of ginger ,a tip of cinnamon and a sip of apple juice concentrate .
