Introduction: Bacon and Frenchfry Salad for BBQ Sidedish

My grandmother made a spectacularly tasty but oh so bad for you potato salad, my mom made it for many years with a couple of healthier changes along the way and now I'm changing it ALL UP, back to grams dressing but using baked "french fries". Sorry for the lack of final pics, the salad was being picked up by my son in law as I finished it so he could store it in his extra fridge

Step 1: What We're Going to Need

I get the steak fries from the Dollar Tree but the generic brand at the super market should work as well, just be sure to break or cut any larger "fries" into a bite size.

 approximately 2 lbs of steak fries
 about 2 cups of mayonnaise
 1lb of bacon, browned and crumbled
 1 cup of bacon ambrosia
 half a large onion, chopped
 1/4 cup apple cider vinegar
  tablespoon sugar
  1/2 cup milk

Step 2: The Fries

spread your steak fries on a baking sheet or pizza pan, I cook them a little hotter than the package calls for and a little longer, about 400f and 45minutes,  you want the potatoes to have a nice outer crust to hold up against the "dressing"

Step 3: BACON ! !

over a med heat cook the bacon until crispy and set on paper towel or a wire rack to cool, reserve the drippings

Step 4: Dressing One

heat the reserved bacon ambrosia and add in the apple cider vinegar, stir to get all the bits off the bottom of the pan, the aroma that will fill your house is HEAVENLY... add in the chopped onion and remove the pan from the heat

Step 5: Dressing 2

In a bowl combine the mayonnaise, the milk, a tablespoon of apple cider vinegar and sugar, stir and taste, it should be slightly sweet to counter all the grease and vinegar in dressing 1

Step 6: Lets Put It Together !

Put your still hot fries in a large mixing bowl or, if like me you don't want to dig out ANOTHER dish, a 5qt cooking pot you just washed after making https://www.instructables.com/id/Baconbluecheese-macaroni-salad-a-BBQ-Side-dish/  add in dressing one and mix it up, allow to set for a couple minutes, stirring occasionally until it's all aborbed. Pour dressing 2 over the potatoes mixing as you go until it "looks right"  What is looks right ? that depends on you but the potatoes should be nicely covered. Save the remaining dressing 2 and if after the salad sits in the frig a while it looks like it needs it, add some more

Step 7: Hurry Hurry Hurry

I had called my son in law to come pick up the salads since the BBQ was at his house and he has an extra refrigerator, he arrived just as I was adding the last of the dressing, I poured the still warm salad into a foil casserole dish and added its cover and out the door it went.... hopefully I can get a pic at the BBQ !
