We use EPICS http://www.aps.anl.gov/epics/ for that at SLAC.  It runs on Linux, Mac and Windows (apparently).  There are probably plenty of other packages.

Did you do a Google search for "CANBUS" and your laptop's platform?  If so, let us know what you found and why it didn't work.  If not, well, you know the drill.

Sorry :-(  Are you acquiring your CANBUS from a car, or a "real" data acquisition system?

For cars, there are plug-in devices you can purchase for (I think) a couple hundred bucks, and they can dump the data in ASCII or CSV format, rather than the native CANBUS binary.

If you're part of a group working with a real data-acquisition or process-control system, then they ought to already have a software package (like EPICS, or maybe LabView?) that can do what you want.
