Hack programmable thermostat without learning arduino and without it being "smart"? Answered

I just want to take the 4 different settings per day that they allow and turn them into 12 different settings per day. I don't want it to communicate with my computer or phone.

I don't think my question was unclear: Any programmable thermostat like those made by Honeywell, NOT the "Smart thermostats." All of these typical thermostats allow 4 temperature settings per day. I want to modify this to allow up to 12 different temperature settings per day.

I do quite a lot of thermostat replacement for work, mostly fridges and freezers but on occasion an aircon as well.
So far the only "hackable" thermostat I found is the STC-1000 series and even there all the hacks are related to home brewing.
If there is a limited amount of settings available then usually there is little to no chance to add more.
Considering all these thermostats do is to turn something on at a set point it should be fairly simple to program an Arduino for the task.
To get 12 settings the only options I know with commercail thermostats is to buy a quite expensive one that can be freely programmed.
I would recommend one but I only ever saw one that 4 different settings never anything with more by default.

I am sorry but my crystal ball is still packed in some box as it was freshly polished and I did not want to ruin it.
