I'm looking to create a circuit that would be for a one button device that left clicks. Could somebody show me how I would do that?

Failing the very simple solution kjsrocks suggests, you need an arduino leonardo, and some pretty minimal software.

I'm a bit late...

I'd Go for the mouse and hook up a small toy motor with an arm on it that would click it

A micro controller would be better for a long term solution, if you can justify the $40-50 for hardware :)

If size does not matter, get a small and cheap travel mouse, crack it open, and wire whatever you want to the left mouse key button.
