How to make crispy/crunchy oatmeal cookies ? Answered

Hello & Thanks ,
I love oatmeal and I love crispy/crunchy cookies , not too sweet .
But so far I have found only chewy oatmeal cookies.
Anyone have a recipe for crispy/crunchy oatmeal cookies ?

Mix in the egg & vanilla until well blended. Combine the flour & baking powder, baking soda & salt; stir into the batter until well blended. Mix in oats, coconut & chocolate chips until evenly distributed. Roll dough into walnut sized balls & place 2 inches apart onto prepared cookie sheets.

Hi, here is a recipe that I like (it is crispy and crunchy). I have tested it with both the European and American measurements.

Oatmeal Cookies by PinchOfChili
- 24 cookies

50 g (1/2 c.) desiccated coconut
100 g (1 c.) quick oats
200 g (1 1/2 c.) whole wheat flour
100-150 g (1/2 c.) cane sugar
1/2 tsp salt
1 tsp baking powder
100 g (1/2 c.) cold oil with a mild taste
about 6 Tbsp cold water

1. Mix dry ingredients.
2. Add oil and stir till evenly distributed. Add water till dough is wet enough to hold together when shaped.
3. Make cookies about 6 cm diameter and 8 mm thick.
4. Bake in a convection oven at 180 degrees C for 15 min. or till golden all around the edges but still a little soft. The cookies will become crisp when they cool. If they do not become crisp, return to oven for a few more minutes.

I think if you add more butter than the recipe calls for, they will spread more as they bake. You'll end up with a thinner, crispier cookie.
