Some software allows you to take a picture of the background beforehand and keyframe the background out. I remember seeing a counselor at a 4H camp do this with a mac, but I did not know what webcam software he was using to do this.
Technically you don't have to use a green screen. You can use a chroma key on any solid color, it's just that green and blue are the standards for various reasons that make them easier to use in most situations.

This is called image keying. I have no idea if OBS can do it but it is an option with most competent editing software.
